For generations, when the temperatures turned cooler, cooks would warm up their kitchens by baking. This fall, warm your kitchen up by baking a Fresh Apple Cake. Loaded with fresh apples, nuts, and spices—this delicious cake makes a perfect dessert to take to a pot luck supper, or serve to family and friends, or enjoy as a snack with a cup of tea and a good book.
Step 1.
Preheat oven to 350.
Liberally grease and flour a Bundt pan, 9”x13” baking pan, or loaf pan. Shake out excess flour. [You can use oil/flour baking spray, but be sure to thoroughly coat the pan.]
Step 2.
Dice 3 cups of fresh apples (any variety)
Chop 1 cup of pecans or walnuts
Set apples and nuts aside.
Step 3.
In a large mixing bowl add:
1 1/ 4 cups vegetable or canola oil
2 cups sugar
2 eggs
2 teaspoons vanilla extract
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
Mix well
Step 4.
Add diced apples and pecans to mixture. Mix well.
Step 5.
Add flour to mixture, a little at a time, mixing well. The batter will be thick.
Step 6.
Spoon batter into prepared pan. Bake for 1 hour. Remove from oven and let cool for 15 minutes before turning onto a serving platter.
